The thirteen omitted letters spell BOUSTROPHEDON, "as the ox plows," which is how words are entered in the grid above--across words from left to right on the first line, then from right to left on the second, then again from left to right on the third, and so forth; down words from top to bottom in the first column, then from bottom to top in the second, then again from top to bottom in the third, and so forth.
